Morning: The Tide Dictates the Start
Our day begins with the tide, not the clock. The unique geographical setting of Laguna San Ignacio allows us to utilize innovative above-seabed growing technology. Here, our oysters are secured in mesh bags and placed on racks, elevating them from the seabed. This protects them from predators and promotes healthier growth as they aren’t buried in mud or sand but are bathing in nutrient-rich waters. As the tide comes in, these waters, cold and packed with phytoplankton from deep ocean upwellings, envelop the oysters. This is when our oysters, acting as natural filters, absorb essential nutrients and cleanse themselves, contributing to their clean, sweet, and light flavor profile.
Afternoon: Training and Maintenance
During low tide, our oysters experience hours out of water, which is crucial for their ability to clamp shut and store clean seawater between their valves—a skill they must master to survive and remain fresh from harvest to delivery. This time also allows our team to perform essential farm maintenance. Racks are inspected and repaired, and the bags are checked to ensure they are secure and free from any potential threats.
Late Summer: A Season for Rest
The late summer months bring a unique rhythm to Sanctuary Oysters. As the water temperatures in the El Vizcaino Biosphere Reserve climb, our oysters begin their natural reproduction process. This period is taxing on the oysters as they expend significant energy. To protect them during this vulnerable phase, we pause production. This not only ensures the wellbeing of our oysters but also allows our staff to take well-deserved breaks, reinforcing our commitment to both environmental and employee wellness.
