OUR SANCTUARY

Sanctuary Oysters come from an oyster’s paradise - a remote lagoon at the very ends of the Earth. An untouched and idyllic place far far away, at the heart of the El Vizcaino Biosphere Reserve in Baja California. A place where coastal marine wonders thrive, including nursery pods of migrating Alaskan grey whales.

The El Vizcaino Biosphere Reserve was declared a UNESCO World Heritage Site in 1988. It is one of planet Earth’s purest and rarest tidal pools. As custodians of these tidal waters, we actively maintain and protect our region’s pristine ecosystem, and help promote sustainable development of local communities wherever possible. Sound environmental stewardship is always at the forefront of our endeavors.

Sanctuary Oysters are nourished by filter feeding on natural, cold and nutrient-rich phytoplankton. Our French designed, above-seabed growing technology optimizes the tidal current’s ability to nutritiously feed and cleanse our oysters. Resulting in delicious oysters with remarkable texture and appearance.

For over 30 years, our oysters have been celebrated worldwide for their superb quality, and impeccable clean taste. Our annual production is sought after both domestically and internationally. Our distribution is tightly controlled to ensure ultimate delicacy and freshness. If you are fortunate to ever come across Sanctuary Oysters, be sure to indulge. One taste, and you will be transported to our magical Baja ocean waters.

We focus on producing only two varieties in our Biosphere Reserve; Pacific Gigas and Kumamotos.

Pacific Oysters 
Crassostrea gigas

Our Pacific oysters from the San Ignacio Lagoon are prized for their signature mix of cucumber sweetness, saltiness, creaminess and tanginess. Of note is the initial wave of brininess on the palate that reflects the celebrated salinity of this southern Baja lagoon.

Kumamoto Oysters
Crassostrea sikamea

Our small-shelled San Ignacio Kumamotos feature bite-sized plump, velvety flesh with a delicate, mild brininess. On the palate, they deliver sweet, fruity flavors with a wondrous melon finish.
