At Sanctuary Oysters, we take pride in growing and harvesting the most full-flavored oysters. When you bite into a Sanctuary Oyster, you’ll experience the perfect balance of its juicy, briny liquor and its slightly sweet meat. So, you might be wondering: how do we do it? Everything we do is with purpose—we only want to grow oysters that are full of rich flavors, while also protecting and maintaining our ecosystem. Where we grow our oysters and our French above-seabed growing technique are two major factors that help our oysters develop their delectable flavor. Every year, the entire Sanctuary Oysters team devotes a lot of time and passion for creating the tastiest oysters for enthusiasts everywhere to enjoy.

 

Cultivating briny, fresh oysters all starts with location. Our farm is located at the heart of El Vizcaino Biosphere Reserve, a UNESCO World Heritage Site where we raise our oysters in a coastal lagoon. It’s the perfect place to grow our oysters because it’s clean and protected from development. Not to mention, the lagoon is fringed by the Baja California desert, which means we don’t encounter any freshwater runoff. This means our oysters are nourished exclusively by the pure, salty water of the Pacific Ocean—resulting in Pacific oysters with rich taste and deep cups.

 

In our oyster production, every step matters. That’s why our team handles every part of the process with care. Our unique, above-seabed growing technique is a critical part of our oyster production. During the pre-growing state, we place our Pacific oysters in mesh bags on racks in the intertidal area. Twice a day, the tide carries the richest phytoplankton from the open ocean to nourish our oysters. By placing our oysters on racks, it improves the tidal current’s ability to feed and cleanse our oysters, which impacts their texture, taste and appearance. After roughly a year and a half, they’re are ready to be enjoyed for their delicious taste, vitamins and minerals.
