Our Favorite Raw Oyster Recipes for Celebrations

From visiting family and friends to hosting gatherings in your own home, special celebrations can come up any time of the year! One of the best ways to have a good time is by enjoying tasty dishes together. Are you trying to decide what to bring to that special party or how to cater to your guests? Have no fear! We’ve rounded up our favorite raw oyster recipes below.

Oyster Ceviche

Whether you’re getting ready to host special guests or have a tasty appetizer for your dinner for two, this fresh oyster ceviche is the perfect option to whip up. All you’ll need is the following ingredients:

·         ¼ finely chopped red onion

·         5 limes, juiced

·         1 tomato

·         ½ of a green bell pepper

·         1 tbsp chopped fresh cilantro

·         1 tsp light olive oil

·         6-12 medium or small Sanctuary Oysters

·         Salt (optional)

Directions:

1.       In a medium bowl, combine the red onion with the lime juice.

2.       Skin the tomato, discard the seeds and juice, and finely chop the remaining flesh.

3.       Dice the green pepper. Add to the bowl and chill for at least 10 minutes.

4.       Shuck the oysters and add their liquid to the bowl. Depending on what size oyster you are using, chop the oysters to desired size and add to the mix. Add salt if desired.

5.        Lastly, add the cilantro and a tsp of and swirl everything together. Let the ceviche infuse in the refrigerator for no more than 10 minutes. Serve in cocktail glasses and enjoy!

 

Oysters on the Half Shell with Mignonette “Sol Azul”

You can’t go wrong with enjoying oysters on the half shell, and this special mignonette is worth the wait. You’ll need the following ingredients:

·         ½ cup of seasoned rice vinegar

·          ½ cup of good white wine vinegar

·         1 small finely diced shallot

·         Freshly ground black pepper to taste

·         24 small or medium Sanctuary Oysters

Directions:

1.       In a small pitcher combine the vinegars, shallot and ground pepper.

2.       Stir and let infuse for at least an hour in the refrigerator; you can make this mignonette a few days ahead of time – the longer it rests the better the flavors can develop.

3.       Shuck the oysters, place them on a bed of ice and add a tsp of mignonette “Sol Azul” on each oyster. Enjoy!

 

Zippy Oyster Shots

Craving a little spice? These Zippy Oyster Shots are a nice tangy addition to any gathering. You’ll need the following ingredients:

·         2 tbsp freshly squeezed lemon juice

·         1 ½ tsp or to taste wasabi powder

·         1 ¼ cup tomato juice

·         ¼ cup minced celery stalks

·         2 tbsp minced celery leaves

·         12 small Sanctuary Oysters with their liquor

·         Kosher salt (if desired)

Directions:

1.       Chill 12 shot or small glasses in the refrigerator for about 1 hour before serving.

2.       In a medium bowl, stir together the lemon juice and wasabi powder until evenly blended.

3.       Add the tomato juice, celery stalks, celery leaves and salt (if used). Stir to evenly blend and let the juice mixture sit for about 15 minutes.

4.       Taste for seasoning- if you want a stronger kick, blend another ½ teaspoon of wasabi powder with 1 tsp of water and add it to the juice mixture. Let it sit again for 5 to 10 minutes.

5.       Spoon a bit of the mixture into the bottom of each shot glass, which will help prevent the oyster from sticking to the glass.

6.       Add an oyster, with the liquor, to each and top with more juice mixture. Serve right away.

7.       If you want to include alcohol in the shooter, add 1 tbsp of cold sake or silver tequila to the shooter right after the oyster, before you add the additional juice mixture. Enjoy!

 

Oysters on the Half Shell with Traditional Condiments

Simple, easy and delicious—you can’t go wrong with a tried and true classic. For this recipe, you’ll only need the following ingredients:

·         Variety of hot sauces (like Tabasco, Valentina, Tapatio or your personal favorite) or cocktail sauce

·         Lemon or lime wedges

·         Any amount of Sanctuary Oysters

Directions:

1.       Shuck the oysters.

2.       Place them on ice on a big platter and serve the condiments on the side.

3.       Advise your guests not to forget to chew on the oyster; if you don’t, you will miss out on the sweet flavor of our little gems. Enjoy!
