Special Date Night Oyster Recipes for Valentine's Day
With Valentine’s Day around the corner, romance is in the air! And for all you lovebirds out there, we find that the best way to someone’s heart is through their palate. That’s why we rounded up four flavorful recipes you can prepare to enjoy this special day with your partner or even with your family and friends.
Oysters Rockefeller a la Sol Azul
If a buttery, cheesy flavor profile makes your mouth water, then this is the recipe for you! Before you preheat your oven, make sure you have the following ingredients:
12 medium Sanctuary Oysters
2 tbsp of unsalted butter
1 small shallot, minced
3 cloves of garlic, minced
1 cup of heavy cream
4 cups of spinach
¾ cup of cheese, grated Pecorino Romano
1 box of ice cream salt
Salt & pepper to taste
Directions:
Arrange shucked oysters on a bed of ice cream salt on a baking tray before you prepare the topping and preheat the oven to 400 degrees.
In a medium skillet melt the butter over medium heat. Add shallots and garlic and sauté until translucent.
Next add the heavy cream. Simmer until it is reduced to about ½ cup and is thickened.
Toss in the spinach and cook until wilted.
Add about 1/2 cup of the grated cheese.
Spoon a tablespoon of the mixture over each oyster.
Top with the remaining cheese.
Bake 8-10 minutes until cheese is browned and the oysters are cooked through.
Oysters Casino
Savory bacon, fresh bell pepper and a pinch of cayenne pepper? Don’t mind if we do! Oysters Casino is a zesty dish that’s extremely satisfying. You’ll need the following ingredients:
2 dozen medium shucked Sanctuary Oysters
4 slices of bacon, chopped
1 stick of unsalted butter
½ cup minced shallots
¼ cup finely chopped red bell pepper
¼ cup finely chopped celery
1 tbsp fresh lemon juice
¼ tsp Worcestershire sauce
Pinch of cayenne pepper
Rock salt
Directions:
Preheat oven to 400 degrees. In a small skillet, cook bacon until almost crisp. Using a slotted spoon, transfer to a paper towel-lined plate; set aside.
Place the butter, shallots, bell pepper, celery, lemon juice, Worcestershire sauce, and cayenne pepper in a food processor; mix until well combined, about 20 seconds.
Spread 1/4 inch rock salt on a rimmed baking sheet and bake for 8 minutes.
Place oysters firmly in the hot rock salt. Place 1 tablespoon of the butter mixture on each oyster; top each with bacon. Bake oysters until bubbly, about 8-10 minutes. Do not overcook.
Buttery Oysters on the Barbeque
Get ready to hop on the grill! Buttery Oysters on the Barbeque is the perfect recipe if you’re planning to spend a sunny day outside with your loved ones. You’ll need the following ingredients:
24 shucked medium Sanctuary Oysters
2 sticks very soft unsalted butter
4 cloves crushed garlic or 2 tbsp dehydrated garlic
2 tbsp 21 Seasoning Salute from Trader Joe’s
1 tbsp of Onion Salt from Trader Joe’s
1 tsp Umami Seasoning Blend from Trader Joe’s
1 tsp smoked paprika
1 tsp red pepper flakes (optional)
Directions:
Combine all ingredients in a medium bowl until well mixed and set aside.
Shuck the oysters, tip out the oyster juice place a tablespoon of the butter mixture on the oyster and put on a hot grill for 4-5 minutes until the butter is bubbling and the oyster is slightly cooked. Be careful, the oysters will be very hot.
It is best when you prepare this butter 24 hours ahead of time so the flavors can fully develop. This compound butter will keep covered in the refrigerator for 1 week.
Cooked Oysters a la Dominique Hutin
Are you looking to bring global flavors to your table? Then fire up the stove to prepare Cooked Oysters a la Dominique Hutin. These are the ingredients you’ll need:
16 medium Sanctuary Oysters
3 tbsp unsalted butter
4 whole Belgian endives
3 small minced shallots
2 oranges, zested and juiced
1 tsp coriander seeds
1 pinch curry powder
Freshly ground pepper to taste
Salt (optional)
Directions:
Open the oysters, tip out the juice and collect the oyster meats in a bowl and set aside.
Wash and cut the endives into strips.
Mince the shallots and fry in a medium saucepan with the butter until translucent.
Add the endives, pepper and curry, coriander seeds and continue cooking until the endives are wilted and the mixture starts to thicken. Deglaze the pan with half of the orange juice.
Make a little well in the pan, add the oyster meats and let them heat up for about a minute; turn once.
On 4 plates arrange a bed of endive, put 4 oysters on top, sprinkle with orange juice and orange zest and finish with a turn of the pepper mill. Serve immediately and enjoy.
