Simple Recipe for Oysters on the BBQ

Ingredients:

3 tsp Butter

1 tbsp minced garlic

5 tbsp of your favorite BBQ sauce

2 tbsp of lemon juice

Few drops of your favorite hot sauce

24 medium or large Sanctuary Oysters

 

Directions:

For the sauce:

Melt butter in a small saucepan over medium heat. Add the garlic and cook for about 1-2 minutes. Remove from heat and add the rest of the ingredients. You can make this sauce up to 3 days ahead of time.

Once you are ready to grill, preheat the grill to medium high.

Un-shucked method:

Place oysters cups down on the grill rack. Close the lid until the top shell opens, 3-5 minutes. Heads up: Some oysters might not open, so don’t leave them on too long.

Carefully, without spilling the oyster liquor, transfer the oysters to a cutting board. Please use tongs, the shells will be hot. Separate the top shells with an oyster knife—use a mitt or oyster glove to protect your hands. Add 1 teaspoon of sauce onto the oysters and cook 2-4 minutes until sauce is bubbling.

Before you dive in let them cool down a bit as sauce and oyster meats are extremely hot!

Pre-shucked method (preferred method):

Place the oysters in a grilling basket lined with wrinkled aluminum foil to make nests for the oysters or use the oyster bed (order here). Add 1 teaspoon of sauce onto the oysters and cook 5-8 minutes until the sauce is bubbling. Make sure you let them cool down a bit as you might burn yourself if you dive in too soon.
