Let’s Celebrate National Oyster Day!

August is one of our favorite months because we get to celebrate the best day of the year -- National Oyster Day! National Oyster day is August 5 and here at Sanctuary Oysters, we want to make sure you’re ready to chef up some of our favorite oyster dishes. We feel like a celebration is not complete without a tasty beverage, so our recipes include the perfect pairing for your meal. Keep reading to dive into seven of our favorite oyster dishes. Oysters Casino by Bon Appétit

This classic recipe is rumored to have hailed from the 1917 hotel, Narragansett Pier Casino of Rhode Island. Till this day, this remains a very popular preparation for both clams and oysters in New England and appears on many restaurant menus there. To complement this dish, pair with a Fume Blanc or an oak aged Sauvignon Blanc.

 

What you will need:

-       8-12 slices bacon, chopped

-       1/2 cup butter, divided

-       1/3 cup chopped green pepper

-       2 tablespoons chopped chives

-       4 tablespoons chopped parsley

-       Fresh lemon juice

-       Rock salt

-       24 medium oysters

 

 

Garlic Oysters by Chef Dennis Littley of Ask Chef Dennis

Calling all garlic lovers for this popular recipe! This is one of the most common and classic oyster recipes and is guaranteed to be a crowd-pleaser. This pairs nicely with crisp white wines to enhance the flavors. 

 

What you will need: 

-        12 medium, freshly opened Sanctuary Oysters

-        2 tbsp garlic, finely chopped

-        4 ounces butter

-        1 tsp Italian parsley, finely chopped

-        ¼ tsp granulated onion

-        ⅛ tsp black pepper

-        1 tbsp Romano cheese grated

 

  

Oysters Rockefeller by Taste of Home

One of the more savory dishes, Oysters Rockefeller is a classic preparation where oysters on the half shell are cooked and topped with various ingredients such as chopped spinach, cheese and seasoned sauce. This style of oyster pairs best with drier wines like a Muscadet, Chablis or Pinot Grigio because of its rich flavor profile. 

 

What you will need:

-       1 medium onion, finely chopped

-       1/2 cup butter, cubed

-       1 package (9 ounces) fresh spinach, torn

-       1 cup grated Romano cheese

-       1 tablespoon lemon juice

-       1/8 teaspoon pepper

-       2 pounds kosher salt

-       3 dozen medium, shucked oysters

 

 

Roasted Oysters by Donya of A Southern Soul

Pull out the grill and get ready to roast those oysters!  This recipe is quick and easy with only four ingredients. To match the simple, yet delicious flavor, pair with champagne or your favorite sparkling white wine for a flavorful experience. 

 

What you will need:

-       2 dozen fresh oysters -- shucked

-       2 sticks salted butter - melted

-       Lemon wedges

-       Hot sauce of your choice

B.O.L.T (Bacon, Oyster, Lettuce and Tomato) by Bon Appétit

 This sandwich combines the crispiness of bacon and the juiciness of an oyster all together to create a delicious, messy meal. To mimic the classic BLT, here this is a twist, keep with the original drink pairing of the sandwich. Try with iced tea, hand-squeezed lemonade, a cold beer or a Coke.

 

What you will need: 

-       1 cup of all-purpose flour

-       1 cup of cornmeal

-       1 tablespoon of garlic powder

-       1 tablespoon onion powder

-       ¼ teaspoon cayenne pepper, kosher salt, freshly ground pepper

-       2 dozen medium or large, freshly shucked oysters

-       12 slices thick-cut bacon

-       5 cups of vegetable oil for frying

-       8 slices brioche or white sandwich bread, toasted mayonnaise, Bibb lettuce, and sliced tomatoes (for serving)

 

 

Oyster Stew  by The Splendid Table

There is something about the simplicity and creaminess of an oyster stew that is just out of this world. This decadent dish takes only a handful of ingredients and 30 minutes or less to make. Best paired with a crisp Chablis. 

 

What you will need: 

-       24 shucked oysters and their liquid

-       4 tablespoons butter

-       2 medium shallots, minced

-       1 small garlic clove minced

-       Salt and fresh ground black pepper to taste

-       4 cups milk

-       2 cups heavy cream

-       2 to 3 drops Tabasco sauce, or to taste

-       Oyster crackers


Oyster Po’Boy Sandwich by Sasha Marx via Serious Eats

Love a good fried sandwich? This recipe hits the spot. This recipe makes the most of briny, salty oysters. Unlike most oyster preparations, pair this with a Crianza, aka a young red wine. 

What you will need: 

For the remoulade:

-        3/4 cup (175ml) mayonnaise

-        1/4 cup (45g) minced dill pickles

-        2 tablespoons (10g) drained prepared horseradish

-        1 tablespoon (15ml) hot sauce

-        1 tablespoon (15ml) Dijon mustard

-        1 tablespoon (15ml) Worcestershire sauce

-        1 tablespoon (15ml) fresh lemon juice

-        1 garlic clove, minced

-        Kosher salt and freshly ground pepper

 

For the oysters:

-        2 cups (280g) all-purpose flour

-        ½ cup (140g) cornmeal

-        2 tablespoons (10g) Creole seasoning

-        4 large eggs

-        24 freshly shucked, medium oysters, liquor reserved and shells discarded

-        2 quarts (1900ml) vegetable oil for frying

-        Kosher salt

 

For serving:

-        4 French or sub-style rolls, lightly toasted

-        Shredded iceberg lettuce

-        2 medium tomatoes, thinly sliced

-        ¾ cup dill pickle chips
